We’ll share a homemade dinner cooked by Alessio in the hostel to break the ice, and dine at Absalon, a former church turned communal hall, where strangers eat together and leave as friends. Because here, food is not just nourishment - it’s connection.

TRIP PURPOSE
Raise awareness and engage participants in the fight against food waste through direct experiences with local projects that promote sustainable and conscious practices. We aim to inspire concrete actions for more responsible and sustainable consumption.
This trip has been designed based on the following principles:

IMPORTANT INFO
We will meet associations and projects working in the city and globally on food waste! These projects work to waste as little food as possible and do their part in the fight against food waste. We will also have the opportunity to actively participate in some of their activities! We will visit some Urban Farms, green oases in the city, and their story will be explained. We are very keen to take you to Absalon's community dinner: we will dine there to experience conviviality and meeting the local community. The menu is published the week before, so we will choose which night we join this fantastic dinner based on the vegan options offered.
ACCOMODATION
We’ll be staying at Next House Copenhagen, a next-generation hostel that blends comfort, design, and a strong community vibe. Our private triple rooms with en-suite bathrooms are perfect for winding down after full days of exploring. The shared spaces are made to connect: from the rooftop terrace to the fitness area, from the indoor arena to stone-baked pizza at the Next Eatery. A cozy and inspiring base right in the heart of Copenhagen.

PAYMENT TERMS
30% down payment at the time of booking and the remaining 70% due 30 days prior to departure.
If the booking is made within 30 days of departure, the full amount is due at checkout.
Bank transfers or credit cards can be used to make payments.
However, if the trip status is marked as "Confirmed" or "Last tickets", there's no need to worry - it means the minimum number of participants has already been met.
ITINERARY
Day 1 – Welcome to the Green Capital of the North
Arrival is expected in the early afternoon—just enough time to drop off your backpack at the hostel, breathe in some Nordic air, and dive straight into our first encounter. We’ll begin by meeting a local organization working to fight food waste and discover how in Denmark, discarded food can become a powerful weapon against the climate crisis.
After this first taste of local activism, we’ll enjoy a warm, cozy evening together. Alessio, our guide and food waste expert, will prepare a homemade dinner at the hostel. It’ll be the perfect time to break the ice, share expectations, and start feeling like a small group with a big mission.
Day 2 – From Fermentation to the Future of Food
The second day begins with a unique encounter: a visit to Reduced, a startup born at the University of Copenhagen that transforms food waste into gourmet fermented products. Leading us through this discovery is Lorenzo Tirelli, originally from Rome but now a citizen of the world. After working in iconic kitchens – from Slow Food America to the legendary Francis Mallmann in Uruguay, and even the labs of Noma – Lorenzo now leads the Reduced team, driving a revolution in how we think about food and its “waste.”
We’ll explore how broths, sauces, and condiments are made from ingredients that would otherwise be discarded, and how this process can have a measurable environmental impact. Waste reduction, fermentation, applied microbiology, and circular economy – all in one project.
If the weather is nice, we’ll grab a slice to-go and enjoy a sweet picnic in Assistens Cemetery, where Andersen and Kierkegaard are buried. In Denmark, it’s very common to picnic in cemeteries, which are often peaceful, well-kept green spaces popular among locals.
The afternoon continues with another encounter related to food waste – but we won’t reveal everything just yet… let’s just say you’ll enjoy discovering the hidden potential of food that never makes it to the shelves.
Dinner and the evening are free: feel free to split up, explore new corners of the city, return to your favorite spots, or simply enjoy some solo time.
Day 3 – Urban Nature, Circular Economy & Community
We start the day with a visit to Banegaarden, a green oasis born from the regeneration of an old railway station. Between urban gardens, sustainable architecture, and cultural spaces, this is where the city and nature meet in one of their most poetic forms.
Within the complex, you'll find various stands offering local food, as well as Perron – The Organic Sourdough Bakery, a bakery specializing in organic artisanal sourdough products.
In the afternoon, we head to WeFood, Denmark’s first supermarket that sells only products discarded by the traditional supply chain. A concrete example of how consumer culture can change – starting with something as simple as your grocery shop. We will meet the team and discuss their vision about the industry.
We’ll wrap up the day with a beautiful community dinner at Absalon, a former church turned social space, where you share a meal with strangers who, after dinner, just might become friends. And for those who want to keep the night going, we’ll head out for a beer in the vibrant Meatpacking District, the heart of Copenhagen’s alternative nightlife.
Day 4 – Alternative Neighborhoods & Urban Activism
After breakfast, we’ll kick off the day with a visit to CopenHill, a waste-to-energy plant that not only provides clean energy to the city but also features a ski slope on its roof!
We then head to Christiania, Europe’s most famous self-managed neighborhood, for some free time to explore its colorful streets, murals, and creative spaces. Here, we’ll have lunch at Morgenstedet, a volunteer-run vegan restaurant serving seasonal dishes often made with recovered ingredients.
In the afternoon, we’ll take part in a volunteer activity with MADBOKS, an organization that rescues unsold food and redistributes it to those in need. A hands-on opportunity to move from inspiration to action.
We’ll then return to the city center and, if the weather didn’t allow for it the day before, we’ll enjoy a relaxing walk in Assistens Cemetery.
Dinner and the evening are once again free: feel free to split up, explore new corners of the city, return to favorite spots, or simply enjoy some solo time.
Day 5 – One Last Taste of Copenhagen
Our last day is free. After breakfast, we’ll say goodbye - hugs, final chats, and maybe the start of a few new friendships.

Alessio Cicchini, better known as @rucoolaaa on social media, is a content creator and educator specializing in food waste reduction, plant-based cooking, and zero-waste practices. Through his colorful and humorous content, he demonstrates how to give new life to often overlooked kitchen scraps, turning them into delicious dishes.
In addition to recipes, a key feature of @rucoolaaa's content is his "cooletti" — a fun and engaging way to introduce regrowing, a unique cultivation method that uses food scraps to grow new vegetables instead of discarding them.
With a background as a social media manager, food specialist, and recipe developer in the food and wine industry, Alessio now dedicates himself full-time to social media education, as well as hosting workshops and lectures in schools and universities.

How do I know if a trip is confirmed?

We use a simple classification to inform you about the availability status of each trip:
"To Be Confirmed": the trip hasn't received any bookings yet but is active.
"Group Creation": the trip has received some bookings and spots are filling up. The trip is active.
"Confirmed": the trip is confirmed and only a few spots are left.
"Sold Out": tickets for that specific trip date are sold out.
"Closed": the trip is no longer active.
What is the average age of participants? Are there age limits?

Participants are generally between 22 and 45 years old, with an average age of 30-35. There are no age limits: we accept minors (with legal guardian consent) and people over 45. However, consider the type of trip, as some activities may require good physical condition.
What are the exact arrival and departure times?

Our trips typically start around lunchtime or early afternoon, with departures in the same timeframe. However, times may vary depending on the destination. We remain flexible so everyone can plan accordingly. If you arrive late or need to leave early, just let us know in advance.
Is vegan/vegetarian food available? What about celiac disease?

Absolutely! Many of our coordinators and participants are vegetarian or vegan, so we always choose restaurants with suitable options. Our trips can also accommodate celiac disease, as long as we are informed in advance. The same applies to any allergies or intolerances.
When is the trip officially confirmed?

For long-haul or non-European trips, confirmation happens at least 1.5 months before departure. If the trip isn’t confirmed by then, it will be canceled. For shorter trips, confirmation happens 3-4 weeks before departure. You’ll receive an email once the trip is confirmed, along with a link to the Telegram group to coordinate logistics with other travelers.
Can I travel with the creator? What transport does the creator use, and from where?

Yes! If the transport type, departure station, and schedule are already set, they will be listed on the trip page. If not, we’ll share this information in the Telegram group once the trip is confirmed.
Why is the trip booked through Apical Booking?
